Tapioca is a root starch derived from the cassava (a.k.a. Manioc,
Yuca). Our tapioca comes as small
pearls, ideal for making tapioca pudding.
For tapioca pudding, soak 3 tbsp pearls in 2.75 cups milk overnight. Add
1/3 cup sugar and 1 well-beaten egg. Cook on medium-high heat, stirring
constantly. Tapioca is done when pearls become transparent and soft. Remove
from heat and stir in 1 tsp of vanilla extract. May be served hot or chilled before serving (it will thicken as it cools).
