Description
Guajillo is the name
for the dried Mirasol chile. It is a slightly berry/fruity flavored chile with
lightly smoky/cocoa undertones. Mild to medium-hot heat, 2500-5000 heat units
(Scoville scale). Used to flavor all kinds of meats, especially chicken. Also
great in salsas, sauces, soups, and stews. Often in harissa. May be treated
with up to 100 ppm ethoxyquin.
