Description
Pasilla, also known
as chile negro, is the name for the dried Chilaca chile. It is a rich flavored
chile that is pungent and tangy with woodsy undertones. Mild to medium heat,
1000-2000 heat units (Scoville scale). Used especially in sauces, combined with
fruits, or as seasoning for lamb, seafood, or duck. May be treated with up to 100 ppm ethoxyquin.
