Irish Moss, also known as Carrageenan Moss, is a species of red alga (seaweed) that is a rich source of proteins and minerals. It is used commonly used for its thickening properties as it contains large amounts of carrageenan, a natural thickener sometimes referred to as "vegan gelatin." While the specific species of red alga Chondrus crispus is the most well known Irish Moss, the common name is used for multiple species of red algae, including Chondracanthus chamissoi. Both species contain similar levels, and the same types, of carrageenan. May naturally contain rare traces of fish or shellfish.
